GRILLED MARINATED FLANK STEAK
Flank steak is technically not a steak at all. Instead, this popular cut of beef comes from the cow’s belly muscles. It’s very flavorful, and very lean. Which makes it popular for those watching fat and calorie intake. Because of it being so lean, it can always benefit from a marinade and the proper cooking technique; be that grilled over high heat or slow-braised. We have found a great Grilled Marinated Flank Steak recipe that is perfect for the BBQ.
While of course there are many marinades out there, and we have quite a few to chose from in our market…but if you chose to make your own, we have opted for a very simple, but delightful marinade that is sure to please you, your entire family, and those guests lucky enough to be visiting when you make this dish. We use just four ingredients that combine acidic, sweet, and savory ingredients which is a perfect way to prepare flank steak for the grill. While acidic citrus juice and salty soy sauce act to both season and tenderize the steak, olive oil helps to keep the meat supple and juicy. A small amount of brown sugar brings out the meat’s natural sweetness and helps to create a slightly caramelized crust once the steak hits the grill.
Recipe Yields 4-Servings
Prep Time: 10-Minutes
MARINADE
Ingredients:
1/3 c. extra-virgin olive oil
1/4 c. low-sodium soy sauce
2 tbsp. lime (or lemon) juice
2 tbsp. packed brown sugar
Steak:
2 lb. flank steak
Kosher salt
Freshly ground black pepper
Directions:
1. In a large bowl, whisk together olive oil, soy sauce, lime juice, and brown sugar. Add steak and toss until coated. Marinate for at least 30 minutes, up to 2 hours.
2. Remove steak from marinade and pat dry with paper towels. Season lightly with salt (remember that there’s soy sauce in the marinade) and pepper.
3. To grill: Preheat grill to medium-high. Place steak on grill and cook to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to thickness of your steak.)
4. To broil: Preheat oven broiler to high. Place steak on a sheet pan and cook, turning once halfway through, until cooked to your liking, about 6 minutes per side for medium-rare. (Cooking time will vary due to thickness of your steak.) Let rest before slicing and serving.
